The cheese It is a matured stretched curd cheese typical of southern Italy. Produced with cow's milk with the addition of only rennet, lactic ferments and salt, it is kept hanging astride (hence the name) a beam for drying and is consequently shaped like a number 8 with two rounded bodies joined by a constriction at the point where it is tied.

Ingredients: Milk, rennet, salt.
