Scamorza is a stretched-curd cheese typical of Campania, although it is now made throughout most of southern Italy and some central regions. As often happens, its origin is unclear. It is said that during provola production, a cheese that had spoiled was treated with hotter-than-usual water in an attempt to recover it, giving rise to scamorza, which does indeed resemble provola. Its name comes from “scamozzare”, meaning to remove a part. In Molise, the more mature version is also called Mozzarella Passita to distinguish it from the fresh variety.
