Nduja ( note: nduja , not nduia!) is a soft, spreadable, spicy salami. It is typical of Monte Poro: Spilinga (in the province of Vibo Valentia) is the chosen municipality, but the production area extends to many municipalities in the Vibo Valentia area. The name nduja derives from the French “andouille”, which means “sausage”.
