Calabrian soppressata is the most prized Calabrian sausage because it is obtained by processing the leanest pork meats, the ham and the fillet, with the addition of the best lard from the front part of the loin. The meats, minced medium and flavored with black pepper or sweet or spicy Calabrian chili pepper, are then stuffed into natural casing, pierced and tied by hand with natural string. Maturing time 50/60 days in the version:
- Sweet;
- spicy.
